Brioche
Brioche Bread
Ingredients
- 4/5 cup milk
- 3 tsp dry yeast
- 3 1/3 cups flour
- 1/3 cup sugar
- 3 egg yolks
- 1 1/8 stick salted butter
- 1 tbsp orange blossom water
Instructions
Activate the yeast
- Heat the milk at 90ºF.
- Add a tsp of sugar in the milk, then add the dry yeast. Stir.
- Wait for 15 minutes.
Prepare the dough
- Pour the milk and yeast in a bowl.
- Add the flour, sugar, yolks, orange blossom water.
- Kneed for 5 minutes, ideally in a stand mixer with the hook.
- Add the butter and kneed until it is well incorporated.
- Cover the bowl and let it prove for 1 hour. The volume should double.
Form the brioche
- Braid the brioche, or separate it into small balls and place them in a pan.
- Prove the brioche for one more hour.
- Preheat the oven at 300ºF, convection bake.
- Bake for 30 minutes.
