Equipment

Ingredients
  

  • 2 cups Liquid heavy cream
  • 1/2 cup sugar
  • 6 egg yolks
  • 1/2 cup brown sugar
  • vanilla extract

Instructions
 

  • Warm the liquid heavy cream on low heat
  • Beat the egg yolks with the sugar and the vanilla extract until it has a foamy texture
  • Add the warm cream into the mixture, constantly stirring
  • Preheat the oven at 325ºF
  • Pour the mixture into the ramekins, bake in a large dish of water, for 30 minutes
  • Refrigirate for 3 hours
  • Sprinkle the brown sugar over each cream brulee and caramelize with a blowtorch (if you don't have a blowtorch, use the ovne broiler at 500ºF for a minute

Ingredients
  

  • 4 cups whole milk
  • 7 tbsp corn starch
  • 1/4 cup sugar
  • 1 tbsp orange blossom water
  • 1 cup chopped pistacchios
  • rose syrup

Instructions
 

  • Mix the sugar, corn starch and few onces of milk.
  • Heat the rest of the milk with the orange blossom water.
  • When the milk is hot, add in the corn starch mixture.
  • Place some chopped pistacchios in the bottom of verrines
  • Pour the milk onto the pistacchios in the verrines.
  • Let is cool down in the fridge for few hours.
  • Decorate with rose syrup and few pistacchios.

Almond Chocolate Pear Tart

Ingredients
  

  • 3 cans of pears
  • 1/3 cup sugar
  • 2/3 cup almond powder
  • 2 eggs
  • 1 cup chocolate chips
  • 7 oz heavy cream
  • 1 puff pastry sheet

Instructions
 

  • Preheat oven at 400º Fahrenheit.
  • Roll out the puff pastry in a tart pan.
  • Melt the chocolate with one tablespoon of heavy cream.
  • Spread the chocolate on the crust.
  • Drain the pears and arrange them in a fancy manner over the chocolate.
  • In a bowl, mix the sugar, the eggs, the almond powder, and the rest of the heavy cream.
  • Pour the mixture on the tart from the center.
  • Bake for 25 minutes.

  • Heat the milk in a saucepan.
  • In a bowl, mix the sugar, the flour, the salt, and the eggs.
  • Add the milk in and whisk until it's liquid.
  • Grease the pan.
  • Pour the mixture into the pan.
  • Add the prunes.
  • Bake for 1 hour and 15 minutes.
  • Enjoy!
