Brioche

Ingredients
  

  • 4/5 cup milk
  • 3 tsp dry yeast
  • 3 1/3 cups flour
  • 1/3 cup sugar
  • 3 egg yolks
  • 1 1/8 stick salted butter
  • 1 tbsp orange blossom water

Instructions
 

Activate the yeast

  • Heat the milk at 90ºF.
  • Add a tsp of sugar in the milk, then add the dry yeast. Stir.
  • Wait for 15 minutes.

Prepare the dough

  • Pour the milk and yeast in a bowl.
  • Add the flour, sugar, yolks, orange blossom water.
  • Kneed for 5 minutes, ideally in a stand mixer with the hook.
  • Add the butter and kneed until it is well incorporated.
  • Cover the bowl and let it prove for 1 hour. The volume should double.

Form the brioche

  • Braid the brioche, or separate it into small balls and place them in a pan.
  • Prove the brioche for one more hour.
  • Preheat the oven at 300ºF, convection bake.
  • Bake for 30 minutes.

Ingredients
  

  • 1 2/3 cups flour
  • 2 tbsp sugar
  • 2 eggs
  • 1 tsp baking powder
  • 5 tbsp butter
  • 1 pinch salt
  • 10 oz milk

Instructions
 

  • Melt the butter.
  • Sift together the flour, baking powder and sugar.
  • Add the eggs and mix.
  • Add the melted butter and mix.
  • Add the milk, little by little, while mixing.
  • Let aside in the fridge for 1 hour (or overnight).
  • Heat a lightly oiled griddle pan over medium heat.
  • Scoop the batter onto the pan.
  • Cook until it is brown on both sides.

  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 2 cups chocolate chips

Instructions
 

  • Preheat the oven at 325ºF.
  • Sift together the flour, baking soda, baking powder and the salt.
  • In a bowl, cream the softened butter, brown sugar, and white sugar until it is well blended.
  • Add the eggs in the bowl and mix.
  • Add the sifted ingredients into the mix.
  • Add the vanilla extract and the chocolate chips.
  • Bake for 30 minutes.

Cupckaes

  • 2 cups flour
  • 2/3 cup sugar
  • 2 eggs
  • 1 stick butter
  • 1 cup milk
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • vanilla extract
  • 1 tsp baking soda

Topping

  • 1 stick butter
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 1/2 tbsp milk
  • 1 tsp vanilla extract

Instructions
 

Prepare the cupcakes

  • Preheat the oven at 375ºF.
  • Line the muffin baking pan with papers.
  • Whisk the softened butter and the sugar.
  • Add the eggs one by one and whisk in between.
  • Add the milk.
  • Incorporate the flour, baking powder, baking soda and vanilla extract.
  • Pour into the muffin baking pan.
  • Bake for 20 minutes.

Prepare the topping

  • Beat the butter for 2 minutes.
  • Add the sugar, cocoa powder, milk, salt and vanilla.
  • Start beating on low speed and gradually increase to medium speed.
  • Pour the mixture into a piping bag and decorate the cupcakes.
